Many of the premier temples in Bangkok, including Wat Po and Wat Arun, are decorated with porcelain rather than traditional tiles. In fact, Thais may have invented recycling in the early 1800s when they started using broken plates and cups from China as ballast for their trading ships making the return trip from China. Once back in Thailand, the porcelain pieces were cut and fashioned for temple decoration. Talk about innovative!

Time flies when youre traveling and its already time for our summer edition of Albino Smiles. We hope everyone is enjoying warmer weather with the snow hopefully behind you for another six months.
Its been a wild few months over here leading trips, kicking off some new community outreach programs, testing new adventures and preparing for our promotional trips back to Canada.

Just when you thought we couldnt top our incredible adventures, weve done it! Were happy to offer two new wild trips with a third on the way. Q: What do Daniel and Scott do during their free time?
A: We usually end up coordinating social programs throughout the kingdom.

Were proud to be involved with four social programs and have dedicated an entire section of our website to the cause.
June 18-20 saw us launch a new teaching program at Hua Mark Noi School, in the far eastern suburbs of Bangkok. Seven hundred, mostly Muslim students, from Grades 1-6 enjoyed three days of fun English instruction with Scott and Daniel.
July 9-19 saw the third installment of English Fun Days in Doi Mae Salong take place. Many thanks to Norma and Louise from Ontario for volunteering their time to teach the students at Santikiri School, as well as the Rotary Club of Bangkok South for their continued financial support.
Different things Thais do that we sometimes find odd, but sometimes aren't much different from what we as westerners do.
When giving a wrapped present to a Thai, they generally will not open it in front of you. Instead they casually offer thanks and wait until theyre in private to check out the contents.

This time we have the ultimate in strange. It covers all bases, but what the heck does it mean?

Massaman Curry with Chicken
Ingredients:
- 3 tbs Massaman curry paste (available at most Asian grocers)
- 500g sliced, boneless chicken
- 3 cups coconut milk
- 2 tbs roasted peanuts
- 5 small peeled potatoes
- 5 small peeled onions
- 2 bay leaves
- 1 cinnamon stick (roast first in a wok with no oil)
- 3 tbs fish sauce
- 2 tbs palm sugar
- 3 tbs tamarind juice
- 1 pinch of salt
Preparation:
Heat the coconut cream in a frying pan until it thickens up. Add Massaman curry paste, roasted peanuts, chicken, potatoes and onion and fry for 3-4 minutes, then add a bit more coconut milk. Once the mixture thickens up again, add fish sauce, palm sugar, tamarind juice and a pinch of salt. Simmer for five minutes. Finally add the bay leaves, cinnamon and simmer until youre dying to eat. Serve with fluffy jasmine rice. Enjoy!
