After all, it’s served in almost every restaurant, has been exported to fancy food joints overseas, and there are thousands of recipes, from Aunty Tran’s family specialty to the braised beef joint at the end of the block.

									<p>But if trends continue, pho might be dethroned as the food that people first think of when thinking about Vietnamese cuisine. You might even start to see fancy restaurants offering varieties of the dish on high-end tasting menus. Enter the humble <em>banh mi</em>.</p><p>To the uninitiated, <em>banh mi</em> is simply a roll of bread stuffed with meat and vegetables and other random condiments – basically, a sandwich. But to those who know a bit about its storied history, the humble creation is a veritable book of modern Vietnam in a single item of food.</p><p>The sandwich first showed up in the 1880s, around the same time that France began its expansion of French Indochina. Combined with a few other items – most especially coffee, of which Vietnam produces some of the world’s best, in our opinion – the Vietnamese culinary scene began to change. <em>Banh mi</em> was originally very simple, consisting of a loaf of French bread, a bit of butter, ham, or pate, and was favored by the upper class, or those who wanted to act like they belonged there.</p><p>It chugged along nicely until the middle of the 20th century, when a lot of things in Vietnam began to change in a big way. When French rule ended in 1954, Vietnam was in control of its destiny for the first time in a long time. Modifications and adjustments were made to everything from government to education to finance, and food wasn’t far behind. Soon, <em>banh mi</em> was available on every street corner. Cheap, easy to make, and simple to carry, it was easily adaptable to a newly revitalized culture looking to regroup.</p><p>In order to spice things up a bit, the Vietnamese took the now-common French meal and added their own twist to it – cilantro, mayonnaise, chilies, and pickled veggies were thrown in the mix, and pork, chicken, and beef were added to the menus to provide a bit of variety. Don’t forget – its popularity was a big deal in Vietnam at the time. This western import had suddenly become a preferred meal for many Vietnamese, whose ancestors would have perished if not for rice, a gift from the gods that had provided sustenance and income for thousands of years. And suddenly this sandwich was all the rage?</p>								</div>

Part of its popularity overseas was the exodus of Vietnamese after the Vietnam War, who craved a taste of home in their newly adopted countries. </span><i><span style="font-weight: 400;">Banh mi</span></i><span style="font-weight: 400;"> restaurants soon started popping up to serve the Vietnamese communities and, increasingly, the burgeoning foodie scene.</span></p><p><span style="font-weight: 400;">As it has grown to become a staple of the Vietnamese diet, so has its versatility in satisfying all tastes. You can find </span><i><span style="font-weight: 400;">banh mi</span></i><span style="font-weight: 400;"> breakfast sandwiches with scrambled eggs and onions, and sandwiches that contain jalapeno, pork belly, cheese, tofu, sardines, or meatballs. You can even find ice cream </span><i><span style="font-weight: 400;">banh mi</span></i><span style="font-weight: 400;"> – literally a roll of bread with scoops of ice cream stuff in the middle!</span></p><p><span style="font-weight: 400;">As its popularity continues to grow, the sandwich can be found in almost every major city in the world. 									<p><span style="font-weight: 400;">I’m pretty happy too, as it’s Sunday morning and I’m wandering aimlessly around the streets of Cholon, aka Saigon’s Chinatown. Whilst it’s unlikely that such a large, unruly, chaotic city as Saigon could ever be gentrified, it’s equally true that District 1, where most tourists stay and where you’ll find most tourist attractions, has had its rough edges smoothed off over the last decade or so. To discover the Saigon of old &#8211; the tiny alleyways, the markets, the incredible street food, the conical hats, the pavement barbers and coffee stalls, the boisterous locals &#8211; you need to escape D1 and dive into the outlying districts, and few are more fascinating than District 5, which encompasses the historic city of Cholon. </span></p><p><span style="font-weight: 400;">Originally settled in the 18th century by the persecuted Hoa people (Vietnamese of Han Chinese ancestry), Cholon (the name means Big Market) officially became a city in 1879 before merging with neighbouring Saigon in 1931. Yet despite having been absorbed for almost a century, Cholon has managed to retain a character all its own, and longer term residents of the city will always feel as if they’re crossing an invisible but very noticeable border when they travel from one to the other. </span></p><p><span style="font-weight: 400;">Most tourists who visit Cholon are Chinese or Taiwanese; the few westerners who venture here tend to stop at a couple of the more popular pagodas before heading back to D1. At Smiling Albino however, we like to go deep into a destination and spend our time exploring on foot, to really get a feel for the place. Coming into an area as fascinating and historic as this, and just hopping between a couple of pagodas by car, is a huge waste, and we’d argue that Cholon has as much to see &#8211; if not more &#8211; than its more famous neighbour.</span></p><p>Of course, like most visitors I start with two of the city’s most famous pagodas &#8211; Thien Hau and Quan Am. If you’re expecting the lavish golden temples of Thailand, Cambodia or Laos, then you couldn’t be more wrong: in this part of Vietnam, worshippers practice a very local form of Buddhism based mainly on Chinese traditions, rather than the Theravada form more common elsewhere in Southeast Asia, and this is reflected in the smaller, more simple nature of the pagodas.</p><p>Here in Thien Hau, unlike on the streets outside, peace and quiet reigns. Worshippers quietly light candles and wave incense, whilst picturesque incense coils hang from the ceiling. Interlopers such as I are made cautiously welcome, provided we don’t get in the way. Bored security guards (everywhere in Vietnam has at least one security guard, and they rarely have anything to do other than smoke endless Hero cigarettes) happily stop and chat or pose for photographs, delighted to meet a foreigner who speaks Vietnamese. You really don’t have to be remotely spiritual to enjoy the cool air, the smell of incense, and the respite from Cholon’s bustling streets.</p>								</div>

									<p>However, I’m not just here for the temples. Cholon is arguably the food capital of Saigon, and I’m hungry, and as I walk around the corner from Thien Hau, I’m immediately faced with a plethora of choices. I have three golden rules when eating in Vietnam. One, go to a joint that does one dish and one dish alone. Two, pick a restaurant where the boss is at least 60. And third, go where the Vietnamese go. I quickly spot a <em>hu tieu</em> noodle soup shop that is packed with locals, sells only different varieties of <em>hu tieu</em>, and whose owner, beckoning me in before I’ve even made up my mind, has clearly been doing this since I was in short trousers.</p><p>As usual, my golden rules do not let me down and the soup &#8211; rice noodles, various pig parts (including stomach), fresh herbs and a shrimp on top &#8211; is everything I’d hoped for and more. As fellow Vietnamophile Anthony Bourdain once said, “<em>This is the way so many of the great meals of my life have been enjoyed. Sitting in the street, eating something out of a bowl that I’m not exactly sure what it is. And scooters going by. So delicious.</em>”</p><p>Breakfast is followed as it always should be in Vietnam, by a cup of fiendishly strong local coffee, and I’m now ready to throw myself back into the fray by visiting the place from which Cholon gets its name &#8211; Binh Tay market, one of the biggest in the city. The market is mainly wholesale but, because of its stunning Chinese architecture, it attracts a lot of tourist visitors, though with the weekend I visit being a public holiday it’s a lot quieter than usual, with most of the stalls closed. On a busy day it’s chaos &#8211; prepare to be pushed, jostled and harangued (albeit goodnaturedly in most cases) if you’re there on a normal day.</p>								</div>

									<p>As I leave the market I encounter my karaoke-singing friend, politely refusing a swig of whatever concoction he’s currently drinking (I like a drink but at 9am?) and taking some photos of him before I really get into the meat &amp; drink of Cholon &#8211; its back alleys. Saigon as a whole is extremely densely populated, with almost 4500 inhabitants per km2, and most of them live cheek-by-jowl in narrow alleyways, only accessible on foot or bike. You simply cannot understand the city without venturing into them &#8211; they’re perfectly safe, you’ll find hidden coffee shops, street food stalls, hairdressers and more, and pretty much everyone you meet will want to stop for a chat.</p><p>That’s certainly what happens to me as I wander Cholon’s back streets. I stop for another coffee next to a tiny neighbourhood pagoda; an old man invites me into his house for a cold drink; a salt trader insists on being photographed cradling a bag of his produce like a newborn infant; I have a long chat with an elderly cyclo driver who I interrupt reading the newspaper; a security guard at a pagoda sports an increasingly rare example of the lucky hairy mole. Such are the benefits of getting off the tourist trail, getting lost, and wandering around smiling at everyone.</p><p>Late in the morning the sky darkens, and I just have enough time to explore Luong Nhu Hoc street, aka lantern street, a mecca for locals during festivals when every shop sells colourful lanterns and other goods, quiet but still colourful on this grey Sunday morning. The heavens open, and I seek shelter in the nearest doorway, which thankfully turns out to be an excellent Chinese restaurant. I enjoy the best roast pork I’ve had in a long time, with some rice cooked in chicken stock and a cold beer, for around $6. Cholon does not give up its charms easily, but armed with a map (or a local expert) and a smile, it’s an absolute joy to visit.</p>								</div>

From the classy beach bars of Hoi An and Nha Trang to the street corner plastic stool bia hoi joints of Hanoi and Saigon, it can often seem to visitors as if the whole country has a glass in its hand, joining in a deafening communal chant of một, hai, ba, dô! (one, two, three, YO! - basically, a countdown to taking a big swig). </h3>				</div>

									<p><span style="font-weight: 400;">Believe it or not, Vietnam is the world’s 9th biggest beer consumer, with the country’s citizens knocking back just over a million litres of the amber nectar in 2020 &#8211; only a few thousand litres behind those much more notorious drinking nations, Japan and the UK. </span></p><p><span style="font-weight: 400;">As in the rest of Southeast Asia, beer arrived with the French colonists in the 19th century, and rapidly captured the hearts, minds and livers of the locals, with regional brews &#8211; Bia Saigon in the south, Huda and Larue in the centre, and Halida in the north for example &#8211; battling it out with popular imports such as Tiger and Heineken. And let’s not forget </span><i><span style="font-weight: 400;">bia hoi</span></i><span style="font-weight: 400;">, the fresh brewed street beer that is the fuel behind many a big night out and, with its lack of additives, allegedly free of hangovers (though our experience suggests this is not always the case). </span></p><p><span style="font-weight: 400;">In recent years, Vietnam’s strong beer culture has seen the country become a regional leader in craft beer, with local craft breweries popping up all over and winning global praise for their brews. 									<p>If there’s one brewery that can claim to have taken craft beer to the locals, it’s Biacraft. Figuring that the best way to tap the local market is to speak its own language, they were the first craft brewer in town to give their beers Vietnamese names, often irreverent ones based on Vietnamese insults or expletives such as <em>Lun Ma Lao</em> (Short but Arrogant) Blonde Ale or <em>Biet Chet Lien</em> (F**ked if I Know) Double IPA.</p><p>Factor in some very creative bar snacks (chicken skin nachos? Yes please), the biggest range of beers in town, and multiple locations &#8211; the laid back canalside Truong Sa outlet is our favourite &#8211; and it’s easy to understand why, on any given night, locals far outnumber foreigners.</p>								</div>

									<p>Founded in 2015 in a tiny upstairs room on &#8211; obviously &#8211; Pasteur Street, this brewery is one of the Saigon craft beer OGs and now has seven outlets across the country. Head to any of their Saigon bars &#8211; we liked the small, intimate branch on Le Thanh Ton, just a short stagger from Heart of Darkness &#8211; and you’ll enjoy a friendly, laid-back atmosphere.</p><p>Their beers are renowned for being light and fruity, with their signature Jasmine IPA one of Saigon’s quintessential craft brews. But if those are too light for you, and you’re feeling brave, try their delicious Cyclo Imperial Chocolate Stout, which comes in at a whopping 13% ABV. You may need to retire to your hotel after that one. </p>								</div>

									<p>Let’s briefly move away from District 1 and head up Hai Ba Trung street, duck down an unassuming little alleyway, and wander into a charming modernist shophouse decorated with classic Socialist Realism posters. Climb up to the top floor and you’ll find Deme, one of the newer kids on the block, selling a mix of their own brews and beers from other brewers.</p><p>The vibe here is more youthful and stripped down than at the city’s other craft venues &#8211; think plastic chairs, Vietnamese hip-hop on the sound system, and hipster students enjoying some of the cheapest craft beers in town. The staff are super friendly, the atmosphere is relaxed, and we thoroughly enjoyed our visit. And if you’re on a crawl, it’s just a short motorbike or taxi hop to Biacraft on Truong Sa. </p>								</div>

									<p>If you’re looking for somewhere a bit more classy and upscale, then East West is the craft beer bar for you. Situated very close to the city’s iconic Ben Thanh market, their taproom doubles as a microbrewery, and you can also take a tour of the brewing facilities and enjoy a tasting as part of your visit.</p><p>Think creative, locally-influenced brews such as Pineapple IPA, served up with superb food (we simply had to try the duck wonton nachos and weren’t disappointed). Probably the most sophisticated entry on this list. </p>								</div>

<p dir="ltr">There are few Asian foods with identities as closely tied to their home country than Pho, the Vietnamese national dish made with rice noodles, meat, and broth seasoned with various types of herbs and spices. Not bad for a dish that only originated in the early 20th century. The dish has gone through various iterations since then, and is now available on every street corner in every village in the country. Which, obviously, is great news.</p>
<p dir="ltr">The first thing to keep in mind is that westerners have butchered the name – it’s no pronounced fow but actually fuhh. Remember that – if one can’t even make an honest attempt at the name of a dish, they’re forbidden from eating it (Smiling Albino rule #28).</p>
<p dir="ltr">While wandering around HCMC looking at temples and drinking strong coffee, we’ve sampled all types of pho, from crowded restaurants to single-chef food stalls. Most of the time it’s simply about the noodles, but there are other things to consider – atmosphere, crowd, and overall look of the place, too. So while no two tastes, moods, days, or personal tastes are ever alike, here are four places you’ll never have to work hard to convince us to go back to.</p>

<p dir="ltr">One of the more popular places in the city to pull up a stool, the giant neon sign over the door doesn’t just say Pho Le, it screams PHO LE! You know you’ve found a good place, too, when the crowd oozes out on the sidewalk and even into the street. Many of the ingredients are made by hand, and it’s what keeps people coming back for more, locals and tourists alike.</p>

<p dir="ltr">There are a few locations of this Saigon mainstay, but we love the (very) bright yellow building just across from Pham Ngu Lao Park. Cheap and known for its large portion sizes and long open hours, the decor isn’t much but the food is pretty awesome. Load your pho up with veggies too, like fresh basil and lots of bean sprouts, to bring out the taste. We usually finish things off with banh mi (Vietnamese sandwich using French bread), which are also really good.</p>

<p dir="ltr">One of the city’s biggest and most popular markets is, no surprise, a great place to try some local food. Talented chefs whip up thousands of bowls of pho every day to feed hungry shoppers, and as it’s a tourist hotspot, many of the menus are in English. There are a lot of dishes to choose from – some of them largely unknown to tourists – but stick with the pho and you can’t go wrong.</p>

<p dir="ltr">Just a few blocks away from the Saigon Zoo, this is the place we head to when we want some upscale noodles. Hefty portions and really tender beef make every trip worthwhile, not to mention piles of veggies for garnish and some great side dishes you won’t find anywhere else. Prices here are more expensive than almost anywhere else, and if you asked them why they’d likely say it was because their noodles are the best in Vietnam. But, there’s an (unsubstantiated) rumor that if you get sick from eating here, they’ll pay your medical bills. It’s hard to argue with that.</p>
