A Beginner's Guide to Bangkok Street Food

We may be biased here, but we think Thai food is some of the world’s best. But no matter how good your local Thai joint is, the best place to find the tastiest, most authentic eats in Bangkok is on the streets.

There are hundreds of dishes, and dozens of varieties of each one – we’ve been here for almost 15 years and we have found some of our favorite street hotspots but are also continually finding new places to grab amazing food on the street.

What the Guidebooks Say

Many guidebooks list dire consequences for eating unsanitary food, and from a western point of view, some street food restaurants look a bit dodgy. But as true fans of Thai food who have eaten at every type of place from five-star hotels to no-star food stalls, that even Google Maps couldn’t find, we can assure you that if you have an adventurous spirit and follow our few simple rules, you shouldn’t have any problems.

Adjustment Period

What you must keep in mind is that you’ll almost certainly have an adjustment period. Even if you’re eating the cleanest food cooked in the most hygienic kitchen in Asia, the water it’s cooked in and the soil it was grown in are different, so some tummy rumbling is not uncommon. Unless you start to feel really sick though, this is not cause for concern. To be extra-safe, eat at food stalls that cook the food when you order it. Stalls that offer trays of pre-cooked food are usually alright, but just to be safe, avoid them when you’re first tucking in.

The First Rule of Street Food

The first rule of Thai street food is: if you see Thais eating there, it’s probably safe – street food vendors rely on regular customers so it’s not in their interests to make people ill! If you see a lot of Thais eating there, it’s probably really good, too. Thais seem to eat nonstop, and some travel miles out of their way to hit their favorite food stall. No matter if you’re jonesing for breakfast, lunch, dinner, or any manner of snack in between, you’ll find something to satisfy you.

How is Thai Food Cooked?

Most Thai street food is cooked to order in steaming woks, bubbling cauldrons of broth, or smoking grills over red-hot coals. Rice, of course, is a staple, and you’ll find it served with almost every dish. Most meals are eaten “Thai-style” – that is, several dishes on a table, which everyone shares. If you’re sitting at a table with a few Thai friends, remember this before you order!

Table Savvy

On the table you’ll also usually see a selection of condiments, which change based on what you’re eating. These include vinegar with chilies, fermented fish sauce, sweet bean sauce, spicy pastes, chopped peanuts, whole cloves of garlic, and even cups of sugar! And don’t expect no hifalutin cloth napkin either – one singular aspect of Thai street food dining is the single sheets of one-ply tissue on the table. The most common reason is that Thais see a napkin as dirty once it’s used – why use a huge cloth when a little dab will do?

One thing to keep in mind is that unless you’re eating noodles, Thais use a fork and a spoon to eat their food – the fork to push the food on to the spoon, and the spoon to do the rest, so don’t worry if your chopstick game is weak.

Mai Poot Thai

When it’s time to order, most street food stalls – at least the ones near to tourist areas – will usually have a menu with some basic English on it and often even pictures (don’t worry if you see “rice with crap meat,” which should be “crab” – at least they’re trying). If there is no menu, most street kitchens have their ingredients on display in front of the cooking area and a quick glance should give you a pretty good idea of what they’re making. And if there’s any doubt, don’t forget that Thais are friendly! It’s fine to stand in front of a stall to see what’s up. Take a look around you to see what people are eating, and when the time comes, don’t forget the great equalizer – sign language. Start out slowly, accept a bit of help, be a bit adventurous, and soon you’ll be searching further and further afield for more street food adventures. Trust us – it’s a very rewarding pursuit.

Food baby, food! Spellbinding flavors that are reason enough to visit Phuket

Food and drink in Phuket's Old Town is reason alone to visit the island.

For those looking for a break from the beaches and have a passionate interest in food, you will be surprised that UNESCO has listed Phuket as a ‘City of Gastronomy’, one of the 17 selected cities worldwide.

My favourite time to explore Phuket’s Old Town is at night, preferably when the market is not in swing (so, not Sunday). The beautiful, century-old architecture stands in silence, gracefully illuminated, and there are plenty of quiet little restaurants and bars to slip into. This is also when you’re also most likely to end up sharing tea with a 4th generation Nyonya.

I did the hard yards of cocktail lounge hopping. Favourites are Club No 43 as well as Dibuk House – both with creative menus and great staff worthy of global hipster recognition as cocktail havens oozing old world cool. Both also have slurpable espresso martinis featuring Northern Thai Coffee and various cocktails featuring Phuket Rum and Gin. The “support local” and local low carbon impact on these menus really deserves another drink for the road, just for good measure.

Several new coffee houses, wine bars and cocktail lounges opened, almost daily, over the course of July, such as the new branch of Daily Dose on Yaowarat Road. It’s the same duo, Khun Tik and Chef Noi from Suay Restaurant. Chef Noi also lends his mobile cheffing skills for private events at Chalong Bay Rum as well as The Underwood Art Factory, which delighted our recent media guests. He has become the go to chef for private catered events and funkified progressive Thai cuisine. Plus he’s a nice guy.

Phuket Old Town might be the most caffeinated place in Thailand, outside of Pai, which may boast the most coffee shops per capita in Thailand. I sought local advice various times for my fix, and was regularly steered to Campus Coffee on Krabi Road, and award-winning superstar barista creations at Shelter Coffee, on Dibuk Road. Certainly, the old town has the caffeinated energy to keep up with the pace of expectations.

I love that about Phuket, and Thailand for that matter. Miraculously good food from the most nondescript roadside kitchens.

Food Baby, Food

Phuket’s global bragging-rights comfort food dish is probably Mee Hokkien, the egg-noodle with pork and/or seafood in thick, peppery soup, bright and adapted by the island’s early Fujian Chinese community. I had no less than 10 dishes in July, all at different locations. There’s even a map of Mee Hokkien of the top 30 or so places on the island to have it, including 20 or so in the Old Town itself.

My fave: Go La for the old school charcoal grill and the to go version wrapped in banana leaves. I also had an outstanding version at a little place near the entrance to Wat Chalong. I love that about Phuket, and Thailand for that matter. Miraculously good food from the most nondescript roadside kitchens.

Mee Hokkien has its connoisseurs. See this well-researched list by the never-full team at Fantastic Food Search. I didn’t get to try their recommendation for fried pigs face, but it does rank as one of Phuket’s other must-try dishes.

Of course you need to also eat at Raya, or their younger sister’s outlet behind it, One Chun. Similar vibe and menu, same extended family, different kitchen. Both feature another of Phuket’s must-eats, that being Gaeng Nua Pu Bai Chaplu, massive chunks of white crab meat and an incredible use of turmeric in the coconut herbal curry-for-your-soul soup, topped with piper leaves. This was like something concocted by Jay Fai’s long lost southern cousin on a turmeric fit. I was utterly helpless, and lathered it over vermicelli noodles in the most selfish display of gluttony I’ve performed in ages. I faked participating in a dinner conversation with friends for fifteen minutes while privately lost in its glory. I regret nothing.

The food and drink scene in the old town is part of Phuket’s native depth, which has been sometimes overlooked the past 25 years in favour of the more globally famous beaches, nightclubs, and superyachts. I love those things too, but Phuket is, afterall, recognized by UNESCO as a global city of gastronomy.

Our advice? Go there, and eat your heart out.

The best of Phuket is found "beyond the beach".

There’s more to Phuket besides sun, sand and sea. For those looking for a break from the beaches and have a passionate interest in food, you will be surprised that UNESCO has listed Phuket as a ‘City of Gastronomy’, one of the 17 selected cities worldwide.

Our favorite way to experience Phuket is by eating and drinking our way around this multicultural town preserved in time.

Phuket Town was the hub of the 19th Century tin trade in Southeast Asia, which brought Hokkien and Hakka Chinese traders, merchants from Malaysia and India, as well as Europeans to get in on the take. The town’s ethnic and religious diversity has created a fascinating culture of unique local beliefs, architecture, art, lifestyle and, of course, cuisine.

Chic cafes, vibrant facades & street treats

We’ll begin with a local coffee at one of the chic cafes in the beautifully restored Shino-Portuguese buildings before exploring Lock Tian food court, where we will sample Phuket fresh spring rolls while watching them being freshly made. This simple food court caters to a variety of local tastes with authentic dishes that are hard to find anywhere else.

How about a bowl of classic Hokkien noodles, followed by ancient shaved-ice dessert? Save room for a stroll through an area where local food vendors gather to sell their unique snacks. Every day there is something different on offer. Some say the Malay-style satay (grilled chicken skewers served with peanut sauce) found here is the best in Phuket.

Bia Hoi: Vietnam's Original Craft Beer

Vietnam is a popular destination for many adventurous tourists to enjoy street food, pagodas and beautiful landscapes. One other distinct experience is the Bia Hoi beer which predominantly can be found along the narrow streets of Hanoi. Bia Hoi is a fast produced and light beer made of rice, malt and sugar, often served more or less directly at the street. Bia Hoi is not just the beer itself, it's also a social concept and experience which includes beer and food, consumed by all social groups under simple circumstances. It’s a tradition that many deals and contracts are sealed during long dinners with food and plenty of beer.

Booming Microbrewery and Bia Hoi Culture

Beer is not only a symbol here, it is also a bearer of culture and a symbol for the new Vietnam, a country that takes in new influences but values local culture. There are about 45 microbreweries in Vietnam, whereof 35 are making Czech inspired beer and the other 10 are influenced by German beer culture. Compared with Bia Hoi and international bottled beers, these beers contain much more malt and hops and are therefore much more full bodied and tasty. Vietnam has a long history with the former allies Czechoslovakia and East Germany and the biggest diasporas are in today’s Czech Republic and Germany. Most of today’s brewers have lived in Czech Republic and brought beer traditions and knowledge with them back to Vietnam.

They brought the ingredients and knowledge of how to make the beer, but even if recipes and ingredients are the same, local water and weather are important to the taste. After a few years many brewers realized that taste references depend on where in the world you are and in particular the local food. So some small changes have been made to adopt the beer after local culture and demand. The result? Amazing beers, well balanced and tasty. Every brewery is making their own beer and variations are not only between breweries but also differing throughout the year depending on yeasting and storage temperatures. The beers are unique and alive, a result of experience and local conditions.

Following the Beer Trail in Vietnam

There is a brewery in every holiday location, but they are easy to miss because of all the other beer establishments in the country. Worldwide Vietnam is known for its beer consumption which is estimated at about 42 litres of beer a year per person. With almost 90 million people you realize that the microbreweries represent less than 1 % of beer consumption. As known today, there are 26 microbreweries in Hanoi, 12 in Ho Chi Minh City and then 7 more throughout Vietnam. You can find a microbrewery in almost every popular travel destination, like in Phu Quoc, Mui Ne, Nha Trang, Da Nang, Da Lat and also the coastal city of Hai Phong which can be visited on the way back from your holiday at the astonishing Halong Bay. On the way back from Halong Bay to Hanoi, make a short stop in the city of Hai Duong, famous for its diamond polishers, and visit the local microbrewery to enjoy two tasty beers before you tackle the culinary challenges in the city.

Hidden Treasures

The few foreign visitors in search of Bia Hoi that have found their way to one of the microbreweries are taken by surprise when they realize that the beers here in Vietnam are much better than many beers at home. The amount of malt is higher than in normal lagers and the hops is carefully added at different times of the beer making process. The breweries are quite small and only a few of them have a web presence and try to reach out to a big crowd. In a city like Hanoi, with 26 microbreweries, each one of them gathers only local attention with occasionally a few expats and tourists.

The interest for beer in Vietnam is huge but also more modest than in Europe and North America where the hype for special beers is strong and microbreweries are popping up everywhere. It has almost gone too far to the point where, in some pubs, it’s impossible to order a regular beer.

Focus on Making Good Beer before Making Money

The brewers in Vietnam invest a lot of time and effort in making good beer. Importing both hops and malt from Czech Republic and Germany requires planning but most importantly; a strong dedication and passion for beer. The microbreweries are there, but not easy to find, so it’s up to the customers to find their way to them. The price of a glass of beer at the breweries is about 35,000 VND, less than 2 USD, despite all the hours creating it and knowledge that is behind the wonderful beer you hold in your hand.

The future is… not so bright, its yellow, semi-bright and with a thick foam on it, full flavors from hops and malt and locally produced. Keep an eye on this beer culture happening in Vietnam and put some effort into finding these dedicated beer makers. Don’t miss this culinary experience!
